Holiday Recipe #3: Shrimp & Lettuce Roll Ups

Something simple never tasted so good! Our third holiday appetizer dish is very simple, low fat and delicious!

Let your guests build their own appetizer with a savory sauce, crunchy sprouts and meaty shrimp!

SHRIMP AND LETTUCE ROLL-UPS WITH SAUCE LOUIS

Serves 6-8 as Appetizer

INGREDIENTS:

                2 lb. Orca Bay Shrimp Large, Thawed, Peeled and Deveined

                1 Carrot, Grated

                1/4 Bunch Cilantro, Minced

                4 oz. (approx. 1 C.) Bean Sprouts

                1 Bibb or Butter Lettuce Head, Leaves Separated, Rinsed

                1 Recipe Sauce Louis (Follows)

METHOD:

  1. Cover and refrigerate.
  2. Here in the Orca Bay Test Kitchen we lean towards Old Bay Seasoning and slices of fresh lemon in a mix of water and wine or beer.

NOTE:  Sauce and shrimp can be prepared up to 24 hours ahead and stored, covered and refrigerated, until party time!

  1. Grate 1 carrot, mince the cilantro, and rinse the bean sprouts, then place each in an individual bowl for serving.
  2. Drain and dry.
  3. For each roll-up, place a teaspoon of Sauce Louis on lettuce leaf, add a piece or two of shrimp, garnish with carrot, bean sprouts and cilantro, roll up and enjoy!

SAUCE LOUIS INGREDIENTS:

                1/2 C. Lowfat Mayonnaise

                1/4 C. Fat Free Sour Cream

                2 Tbsp. Chili Sauce

                2 Tbsp.  Red Bell Pepper, Finely Minced (about 1/4 each)

                2 Tbsp.  Yellow Bell Pepper, Finely Minced (about 1/4 each)

                2 Tbsp.  Scallions, Sliced, Both White and Green Parts (about 2 each)

                1 Tbsp. Fresh Lemon Juice (about 1/4 lemon)

                1/4 - 1/2 tsp. Worcestershire Sauce

                Pinch Each, Salt and Cayenne Pepper

METHOD:

  1. Place all ingredients together in a small bowl and stir until combined.
  2. Cover and refrigerate until needed.
