Sockeye Salmon Steamed with Ginger, Scallions and Lime

Ingredients

  • 4 (8 oz.) Orca Bay Sockeye Fillets
  • 2 tbsp ginger peeled and sliced into rounds and then thin strips
  • 2 scallions out on the bias
  • 1 lime sliced into 12 lime rounds
  • 8 tbsp. soy sauce
  • 4 tbsp. sesame oil
  • 4 tbsp. mirin (rice cooking wine)

Instructions

  • Place the salmon fillets on 4 small plates that can fit inside a bamboo steamer.
  • Season each fillet with 1 ½ teaspoons of the ginger, 3 lime rounds, 2 tbsp soy sauce, 1 tbsp sesame oil, and 1 tbsp mirin.
  • Evenly distribute the scallions on top of each fillet.
  • Place one plate at a time in the bamboo steamer, cover and steam for 5 minutes.
  • The fish is done when it is firm to the touch.
  • Keep covered after removing from the steamer and repeat with the rest of the fillets.
  • Serve with a favorite rice or noodle and vegetables.
