In small bowl mix butter, olives, parsley, balsamic vinegar and orange peel. Keep warm to prevent firming.
Preheat grill on medium heat and brush Sea Bass fillets with olive oil, sprinkle with salt and pepper.
Place fillets on grill and cover, cooking for 5 minutes each side until fish flakes easily with a fork.
Spoon Citrus-Olive Butter mixture over Sea Bass fillet on plate and serve.
