Poached Pollock with Mint & Orange

Ingredients

  • 4 ea. Orca Bay Pollock Fillets
  • 1 C. Dry White Wine, such as Chardonnay
  • 1/2 C. Water
  • 1/4 C. Shallots, thinly sliced (about 1 whole small shallot)
  • 1 Tbsp. minced fresh Mint (Basil may be substituted)
  • 2 tsp. finely minced fresh Ginger
  • 2 Tbsp. Orange Juice Concentrate
  • 1/2 tsp. Salt
  • Pinch coarse ground Black Pepper

Instructions

METHOD:

  1. Bring to a simmer over medium high heat and simmer 3 to 4 minutes until shallots begin to soften.
  2. Cover pan with lid and poach the fish for 8 – 10 minutes for frozen fillets, or 6 – 8 minutes if thawed when added to pan.
