Pan Fried King Crab Cake

Ingredients

  • 2 cups of Orca Bay King Crab Meat
  • ¼ cup finely chopped onion
  • 2-3 eggs
  • 2 tablespoons of panko bread crumbs, plus 1½ cups for coating
  • 2 tablespoon lemon juice
  • Pinch of salt (use a small amount since crab meat is already salty)
  • ¼ teaspoon black pepper
  • 1 cup of flour
  • Vegetable oil (generous amount)

Instructions

  1. In a medium bowl, combine onion, 1 egg, lemon juice, pinch of salt, and black pepper; mix well with a folk.
  2. Stir in crab meat and 2 tablespoons of panko gently to make a paste; shape into a cake approximately 2 inches wide and 1 inch thick.
  3. Line up flour, 2 eggs (salted and well stirred). And the rest of the panko in 3 separate shallow dishes.
  4. Coat all sides of each cake lightly in flour, egg, and panko in order. Make sure panko adheres well to the cake.
  5. Drizzle and heat a generous amount of oil in a large skillet and cook until golden brown.
  6. Serve hot with your favorite tarter, chili or honey mustard sauce.
