Scoop out the melon using a melon baller, or cut the rind off the melon and dice the remaining fruit into 1/2” cubes. In a large mixing bowl, combine the diced melon, the thawed langostinos, the celery, scallions, and raisins. Chill.
Whisk together the yogurt, curry powder, onion, and juice of the lime. Divide the melon/langostino mixture evenly between six plates, top each with about 2-1/2 Tbsp. of dressing, and garnish with the chopped cashews.
