King Crab with Mango and Avocado Salad

Ingredients

  • 2 cups of Orca Bay King Crab
  • 2 large tomatoes
  • 1 avocado
  • 1 mango
  • 6-9 ounces of fresh baby spinach or any greens
  • 3 tablespoons of extra-virgin olive oil
  • 2 tablespoons of balsamic vinegar
  • ½ teaspoon of sea salt

Instructions

  1. Cut tomatoes into 1 inch cubes, and cut avocado and mango into ½ inch cubes.
  2. Mix dressing ingredients well.
  3. On a bed of spinach arrange the rest of the ingredients and sprinkle with dressing. Serve immediately.
