King Crab with Leek Soup

Ingredients

  • 2-3 sectioned Orca Bay King Crab (shell on)
  • 5-6 mussels cleaned and debeared
  • 5-6 clams scrubbed
  • 2 cups chicken broth
  • 2 cups of water
  • ½ cup of dry white wine
  • 1 cup leek, cut crosswise into ¼ inch thick slices
  • 1 tablespoon minced garlic
  • ½ yellow onion, thinly sliced
  • 1 tablespoon of grape seed or vegetable oil
  • Pinch of sea salt
  • Red pepper flakes (optional)
  • Chopped Jalapeno (optional)

Instructions

  1. In a 6 to 8 quart sauce pan over medium heat, warm the oil and add onion and leek, cook until soft.
  2. Add garlic, mussels, clams and white wine and simmer with lid closed until the shellfish open their shells (about 6-8 minutes)
  3. Add chicken broth and water and bring to a boil. Add King Crab and simmer for another 5 minutes making sure not to overcook the shell fish.
  4. Be sure to taste the broth before adding salt to season. You may add red pepper flakes and/or chopped jalapeno to spice it up. Serve immediately.
