King Crab Orecchiette with Three Cheeses

Ingredients

  • 2 cups of Orca Bay King Crab Meat
  • 1 thinly sliced onion (about a cup)
  • 1½ tablespoon flour
  • ½ cup chicken broth
  • 1 cup whole milk
  • ½ cup freshly grated parmesan cheese
  • ½ cup grated white cheddar
  • ½ cup grated parmigiano-reggiano
  • 2 tablespoons of butter
  • 2 tablespoons of grape seed oil (or vegetable oil)
  • Salt
  • Black pepper

Instructions

  1. In a small sauce pan, melt butter and 1 tablespoon of oil then mix it with the flour.
  2. Turn off the stove and whisk the mixture as you add the chicken broth and milk, a little at a time.
  3. Bring heat back to medium heat and add all three cheeses in small amounts, a little at a time.
  4. In a medium pan, add 1 tablespoon of oil and sauté’ onions until transparent.
  5. Add a little salt to the onions and pour cheese sauce. Lower the heat to medium and pour sauce and fold in crab meat.
  6. Cook Orecchiette according to package directions and strain (do not wash under water).
  7. Pour sauce over cooked pasta in serving bowl. Sprinkle with parmesan cheese and black pepper.
