Creole Style Flounder

Ingredients

  • 1 1/2 lb. Orca Bay flounder
  • 1 lg. green pepper, sliced in thin strips
  • 1 1/2 c. green onions & tops, sliced
  • 2 tbsp. butter
  • 1 can tomatoes, chopped (2 c.)
  • 1 can tomato sauce (8 oz.)
  • Salt & pepper
  • 1/2 tsp. ground thyme
  • 1 bay leaf
  • 3 c. cooked rice

Instructions

  • Cook onions and pepper in butter until soft (not brown).
  • Stir in tomatoes, tomato sauce, salt and pepper, thyme and bay leaf.
  • Simmer 15 minutes.
  • Remove bay leaf.
  • Spoon over flounder.
  • Bake at 375 degrees for 15 minutes or until flounder is flaky.
  • Serve over a bed of rice.
