Cod in Garlic Marinade

Ingredients

  • 4 x 6 oz (175 g) Orca Bay Alaska Cod fillet portions
  • 2 tsp lemon juice
  • salt and freshly ground black pepper
  • 3 garlic cloves, crushed with a little salt
  • 4 - 5 tbsp oil
  • 2 tbsp (1 oz) 25 g butter
  • 1 tbsp chopped fresh parsley

Instructions

  • Preheat the oven to 400°F (200°C) Gas Mk 6.
  • Rinse and dry the cod. Sprinkle over the lemon juice and leave for 15 minutes.
  • Sprinkle salt and pepper to taste on both sides of the cutlets.
  • Place the garlic and oil in a bowl, mix well and dip the cutlets into this mixture until they are well coated with the marinade.
  • Place the cutlets in an ovenproof dish and dot each with butter.
  • Bake in the oven for 15-20 minutes, basting with the marinade from time to time.
  • Sprinkle over the parsley and serve at once.
